At the origins of Modica Chocolate, the cocoa beans were processed on site on the metate (an ancient curved stone), gradually incorporating the sugar granules, thus giving it its characteristic grainy consistency.
An alchemy, a traditional ritual performed by people, ancient instruments, fragrant spices, and noisy dances that marked the stages of chocolate making.
The only chocolate in the world that boasts the Protected Geographical Indication (PGI) certification.

You can almost see the " u ciucculattaru " kneading the chocolate and hear the melody of the "battuta del cioccolato": an ancient phase of chocolate making where the tin molds were beaten on the marble slab to settle the chocolate in the molds and eliminate air bubbles. An ancient, slow, rhythmic gesture that almost seemed like a dance.

o What does processing from cocoa mass mean?
Chocolate is defined as a bar that contains cocoa mass and sugar : the two essential ingredients of chocolate.
To make chocolate, in fact, we start with the famous cocoa mass made from cocoa beans, a ready-made product that is practical and easy to find.
Since 2000, when Ciokarrua began producing Modica chocolate, we have continued to produce our Traditional line using cocoa mass, aiming to contribute to the development of this ancient recipe and ensure constant growth in terms of taste and quality.
An ancient recipe steeped in history and tradition, yet continually expanded with a carefully curated and diverse selection of flavors, because we want to innovate the chocolate tasting experience without straying from our roots. Traditional Modica PGI chocolate varies in dark content from a minimum of 50% cocoa to 90%. This way, you can choose the perfect dark chocolate for your taste and fully enjoy all the benefits of healthy, delicious, and authentic chocolate.
The recommended daily amount of chocolate varies between 20 and 40 g, depending on your needs, so you will only need to eat one or two rectangles of a traditional chocolate bar to ensure your daily dose (each rectangle weighs 25 g).
Breaking it is very easy. When you do, listen for the sound; if it crunches, it's perfect!
Dark chocolate is a diet friend! The release of endorphins improves our mood and combats cortisol, the stress hormone and a direct cause, along with other factors, of weight gain.

or How do you preserve chocolate at home?
Despite our care in ensuring a quality product, poor storage of the product can alter the chocolate.
Exposing chocolate to temperature extremes, such as direct heat or refrigeration, will alter the product's organoleptic properties. This will cause cocoa butter to rise and stain the surface; it will taste powdery, smell dull, and it will crumble to the touch and lack crunch. Therefore, we strongly recommend following the instructions on the label.

It's difficult to choose compostable materials when it comes to delicate foods like chocolate, but we're working to ensure that Ciokarrua can contribute to a cleaner world!
