Patrì Disiò is a sparkling white wine produced in central-southern Sicily. The different grape varieties are harvested and vinified separately. The manual harvest begins in the early hours of the morning to preserve the freshness and aromatic integrity of the bunches. In the cellar, the grapes are destemmed, followed by a brief low-temperature maceration process. This is followed by soft pressing and, after cold decantation, temperature-controlled alcoholic fermentation. Once alcoholic fermentation is complete, the various batches of wine are left to mature in stainless steel until blending. The secondary fermentation takes place through natural refermentation in pressure tanks using the Martinotti-Charmat method.

Tasting Notes

In the glass it appears crystalline, with a pleasantly straw yellow colour
enriched by a fine perlage. The aromas are fresh and fruity with pleasant
notes of Mediterranean scrub and aromatic herbs. The taste is fresh and
balanced, with a delicious lively note that gives vivacity and great drinkability.

Pairings

Eclectic wine in pairing that can also accompany the whole day
meal that is enhanced when paired with seafood dishes or with flavours
generous of the native Sicilian rotisserie and the Italian pizzeria.

Cellar - Patrì

Cantine Patrì has solid roots, a tenacious history that began in the Butera area in 1936 when Rocco Paterna founded the farm. His son-in-law Giuseppe Patrì then took the reins with foresight and determination.
And with the same determination, years later, his son Rocco, his wife Patrizia and their children Giuseppe, Elisa and Daniela, decided to enhance the extraordinary winemaking heritage of Butera, allocating a third of the two hundred and fifty hectares of property to the production of wines.
Today, the company is a source of pride and a global ambassador, with its labels showcasing the expressive liveliness of the Riesi DOC, the Sicilia DOC, and the Cerasuolo di Vittoria DOCG.
