An imaginary journey to the heart of Sicily, among the hills of San Cipirello in the province of Palermo. This is the location of the vineyard from which Tenute Jato sources the grapes for this Sant'Anselmo, Terre Siciliane IGT Perricone. A structured red made from 100% Perricone grapes, this wine perfectly represents the new Sicilian viticulture, combining quality, modernity, and tradition. Starting with the grape variety, Perricone, one of Sicily's oldest and most fascinating varietals, known for its ability to produce intense and complex wines. The grapes used for this Sant'Anselmo come from select vineyards located in a prime area, where the combination of soils and good exposure contribute to developing the distinctive organoleptic characteristics of this wine. In the cellar, after destemming and crushing, the must, along with the skins and seeds, undergoes maceration and temperature-controlled fermentation. This allows for the best extraction of all the aromatic compounds and tannins. Malolactic fermentation follows, softening the acidity and rounding it out. The wine then continues to age in stainless steel, in contact with its fine lees, until the end of November. Finally, it is transferred to barriques for a further three months of aging, which gives the finished wine elegance and aromatic depth.
