Tasting Notes
The color is a bright straw yellow with golden highlights. The nose opens with intense citrus aromas, such as lemon and grapefruit, followed by hints of white flowers, honey, and a distinct saline minerality. On the palate, the wine is dry and structured, with a vibrant acidity that balances a surprising complexity. Notes of flint and a long, savory finish make every sip unforgettable.

The Hatzidakis winery is one of the most prestigious in Greece, located on the island of Santorini. Founded in 1997 by Haridimos Hatzidakis, it is a symbol of the heroic viticulture practiced in this unique territory. The Assyrtiko vines grow in extreme conditions, intertwined in characteristic shapes to protect them from strong winds and intense sun. Hatzidakis embraced an organic and natural philosophy, avoiding pesticides and chemical interventions. After the founder's passing in 2017, the family continued his work, keeping alive his vision of authenticity and quality. Today, Hatzidakis wines are internationally recognized as one of the finest expressions of the island of Santorini.
