Tasting Notes
This sparkling wine features a golden color with greenish highlights and a fine, persistent perlage. On the nose, mineral notes and hints of flint emerge, complemented by nuances of bread crust and white fruit. On the palate, it is refined and creamy, with lively acidity and a pronounced minerality that lends freshness.
Pairings
Perfect throughout a meal, it pairs particularly well with fish and shellfish dishes, even raw. Try it with light chicken main courses and soft cheeses like Taleggio and Camembert.
Cellar - Etna Terraces
Located in Randazzo, within the Etna Natural Park, the Terrazze dell'Etna winery sits approximately 800 meters above sea level. Founded by Nino Bevilaqua, a Palermo-born engineer and wine enthusiast, the winery restored ancient terraces on the volcano's north slope to produce typical local wines. The estate now extends over approximately 36 hectares, comprising not only vineyards but also olive groves and forests of chestnut, cherry, and oak trees.
The vineyards, planted primarily with Nerello Mascalese and Nerello Cappuccino grapes, also feature international varieties such as Chardonnay, Pinot Noir, and Petit Verdot. Every operation is carried out manually, with care and respect for the environment. Thanks to the expertise of winemaker Roberto Cotarella, production reaches approximately 160,000 bottles annually, divided into a dozen or so labels that showcase the character of the Etna terroir. Among the offerings, the fresh and minerally Metodo Classico sparkling wines also stand out, continuing the tradition of sparkling winemaking on Etna.
